Garlic Fried Chicken

One of my faaaaavooorrriiittee things to eat at Zippy's is their korean chicken with mac salad and rice. AAHHHhhhggg I LOVE IT! I found a recipe in an old country cookbook a while ago for a similar recipe but now that book is lost (boo!) Luckily, I made the chicken a few ( like 2 ) times before losing the book and still kinda remember it. I've tweaked it a little to where I like it so here's the results. It's the closest I've gotten to Zippy's...maybe even better :) I just made this on Sunday but yeah we ate it all before I could even take a pic. Next time though :) KOREAN FRIED GARLIC CHICKEN What you will need for the sauce : chopped garlic- 1 head 1 cupp soy sauce 1 cup sugar 1/4 cup onion red pepper flakes Optional 1 tsp grated ginger 1/2 tsp red pepper flakes 1 tsp sesame oil What you will need for the frying : 5lbs Chicken- whatever parts you like to fry. This is one I found on Pinterest and thought would be good. Those food pics are always sooo convincing.   When it comes to recipes, Pinterest is either a hit or miss.  This was a hit! Thankgoodness..I hate wasting food, time, an energy for a blah recipe.     The kids loved these little bites and I loved that it was good for them ( no flour, no oil, no sugar.... not that I'm a health nut but sometimes I like to try )!  #Winning! Easy Maple Syrup

This recipe I learned from when I was living with Uati and Omi.  It's super simple, frugal, and tasty.  All you need for easy maple syrup is 3 ingredients.. sugar water Maple extract (or imitation extract). Here's how it's made... It's a 2:1 ratio of sugar to water so.... 2 cups of sugar to 1 cup of water or whatever measurement you want to use just make sure its a 2:1 ratio.  Bring to boil and allow it to boil until the sugar is dissolved and the liquid is clear. Then add in a tablespoon of maple extract (Use a little less if your using less than 2 cups sugar) and bring it down to a simmer. You could just turn the heat off and let it sit on the burner until it cools.  Let it simmer for a few minutes (2-3). Give it a good stir and there you go. It's 2014 ya'll !!!  And I feel like it's going to be a good year! Last year I got to go the Alicia Keys and John Legend Concert in New Zealand...well I went vicariously through my Sis-in-law Sui...but either way...my girl Alicia said to "be A New You" and "Follow Your Heart!" or was it "Dreams"?  Either way.... Garlic Roasted (Whole) Chicken

There's always two things that worry me when roasting a whole chicken- 1. The white meat coming out dry and not juicy.  2. Having to choose what spices/herbs/flavors to use.   There are so many combinations/flavors to choose from. How do you choose? Well...#2 really isn't that big of a deal, especially when you are limited on ingredients. Thanks to the Food Network website I've found a recipe that takes care of both my concerns.  I gave it a try the other night using what I had and the chicken came out juicy and succulent. Definitely a keeper!! You can adjust the seasonings any way you like! Bringing in the New Year!

We decided to celebrate New Years Eve by just relaxing and staying home. Hmmm....talk about sure signs that we are getting old.  Funny how time flies. Just a few years ago (almost 10!! Holy Crap!!)  we were starting our college lives single and ready to mingle.  Now we are married, expecting kid #3, and living the life!!! *A more fulfilling life lol.   This cartoon sums its up. Minus the alcohol and immodest attire.  So we enjoyed our Last Supper of 2013.  Decided to end the year with a "healthy" meal of stuffed pork chops, gravy, mashed potatoes, and green beans.  Then I got the phone call from Uati that we should come over to their ward dance. Despite not having much energy for it, we decided to suck it up and stop being old futs and go to the dance. I'm glad we did.  It was so good to see our Afele family again. Our Very Merry Week of Christmas

This Christmas is definitely one for the books. Although we didn't get to do all the Christmas traditions we would usually do (and wanted to start) we were still able to make wonderful memories, surround ourselves with family and friends, and most importantly shift our thoughts and hearts towards the Savior.  Here's our very Merry Christmas week.
