February happenings

Man I can't believe February is almost over. Where does the time go? It's not like we did anything spectacular or were completely booked that time seemed to fly... maybe it's because I'm so busy enjoying fun filled enrichment activities with my kids  that I haven't noticed the time...bahahahahah FAT CHANCE !!! I WISH!!! *i honestly try but still have a ways to go lol...I'll post more on the kids in another post. Anyways...Here's a bit of our February... Aljay and Art Aljay's been spending more time on his art-- trying to find a balance between work, working out (yes he's back into gym mode again), family, and art. He's been able to complete a couple of sketchings and one and a half paintings.   I'm so proud of him for really taking his time and not taking the lazy way and rushing through his art (as he's done in the past). There is a noticeable difference in the quality of his work which has motivated and inspired him.  ...

Chicken Salad Sandwiches

I love a good chicken salad sandwich.  And there's a lot of different versions out there....but this one is my favorite. It's quick and easy. Yummy and inexpensive. This is perfect for refreshments for a crowd or for family lunch or dinner or brunch...whenevers really.   Chicken Salad Sandwich 2-3 cups chopped rotisserie or roasted chicken 1/2 - 1 cup mayo chopped green onion, 2-3 stalks are good 1/2 cup grapes, halved celery, half a stalk diced pan juices from the chicken salt/pepper And thats all folks. Mix everything in a bowl and have a taste. Add a little or a lot more of what you like ( like more Mayo if your like my husband, or more grapes and celery if your like me ).  This recipe is easy to adjust to your liking. Spread the mix on your favorite bread or rolls and enjoy. Other variations: some people like to add apples and cashews and whatnot. hmm...I wonder how mandarin slices would taste instead of grapes? But yeah I like ...

Lettuce Wraps

*Frugal Recipe During this 3rd pregnancy I've been preferring healthy food and lots of fruits and veggies. ( Hope this lasts throughout the pregnancy #fingerscrossed ) Every now and then I want a chocolate chip cookie, but for the most part I haven't had really strong distinct cravings.  For the first time out of 3 pregnancies, those cravings have all gone to my husband . No joke. He gets all sorts of food cravings...hot dogs at midnight, ice cream at any time of the day, chocolate cake, sweets in general....I wish I had the cravings because I can control/handle my cravings a bit better than my husband. At least that's what I like to think. I've had more practice anyways.  Can you imagine a grown yoke Samoan man with the appetite of a lion having the food cravings of a pregnant woman? And yes...with emotional side effects included ( i.e. frustration and sadness because food cravings aren't satisfied, gazelle-like intensity to obtain desired food ) LOL.......

Dreams Can Come True!

I'm a firm believer that  Dreams can Come True ! And for the Fuimaono Family our dreams are becoming a reality!!! WE ARE MOVING BACK TO HAWAII!!! (and in the voice of Malositoa Te'o-Tafiti) "YOU FRIKKEN WISH!!!" So yeah... NO we are NOT moving back to Hawaii. But y es ..... I do frikken wish.  and YES ...I still have HOPE . It doesn't mean that dreams aren't being realized.  Sure Utah isn't my dream location to live but We are in Utah for a reason ( one that I'm still sloowwwly figuring out/accepting ) . I don't know how long we'll be here  ( or I'll be able to stand the cold ) , BUT I do know this is where we are supposed to be AND we're going to make the most of this opportunity.  So far, I think we're on our way of accomplishing that goal. Being in Utah has allowed us to live out some of our dreams, like becoming home owners and me being a stay at home mom, and also realize ...

Sweet Onion Sauce

As a family of four, living on one income, we try to live within our means and look for opportunities to save money.  To cut cost on food, we mealplan, take advantage of sales, stick to our budget, and limit fastfood/eating out to only once a month.  So I try different ways to make "fastfood" at home.  Today's experiment = Subway's BLT We made our BLT's with turkey bacon (because it's cheaper than regular bacon), homemade subway bread , lettuce and tomatoes, mayo, cheese, and sweet onion sauce . We did have some bakes sweet potato fries on the side but I wasn't crazy about how they turned out. Aljay and I always get Subway's sweet onion sauce on any sub we order so I thought I'd give it a try and make our Subway night even more special. As if baking the bread from scratch wasn't already a special event in itself. My family knows I'm not a baker.  After reading several different recipes I used what I had at home and was pleasa...
